Peach Cobbler Crockpot Crisp – Gluten Free

Cobbler Ingredients:
-7 pears, sliced or cubed
-butter (softened)
-brown sugar (or we use Coconut Crystals instead)
-cinnamon
Topping Ingredients:
-1 1/2 cups slow cook gluten-free oatmeal
-1 cup almond flour
-1/2 cup brown sugar (or Coconut Crystals)
-1 stick butter (softened)
-cinnamon

Preparation:
Place sliced or cubed pears in crockpot, along with enough butter, sugar and cinnamon to coat it. Stir it all together until well-coated with yummy stuff.

For the topping: Use a medium bowl and mix all the ingredients together until crumbly. (For gluten-free eaters, I use the almond flour, but I also finely chop some pecans and mix in with the mixture to help the crumbly consistency.) Sprinkle crumbly mixture over the top of the pears. Cook on low for 2-3 hours and enjoy!

We make this for dessert, a side dish, or breakfast. It’s very versatile and can also be made with apples or fresh peaches instead of pears.
